Hibiscus sabdariffa-based beverage mixed with tropical fruits : production, acceptability and purchase possibility.

Resumen

The purpose of this work was to prepare a drink based on Hibiscus sabdariffa and pineapple as the main products with ginger and sugar as optional elements and to verify its acceptability and purchase possibility by the Central American population. The choice of Hibiscus sabdariffa was because of its contribution of antioxidants, acidic taste and the health benefits to consumers. Pineapple was chosen because it is a tropical fruit widely consumed throughout the world and for its organoleptic characteristics. Firstly, a survey was carried out evaluating the profile of consumers of natural drinks, and it was concluded that consumers preferred to consume beverages such as fruit juice compared to tea, mineral water and mates. Next, a beverage with the main ingredients Hibiscus sabdariffa and pineapple was developed, producing the following mixtures: Hibiscus sabdariffa + pineapple (RJP) and Hibiscus sabdariffa + pineapple + ginger (RJPG). There were three different treatments (T1, T2, and T3) with sugar and without sugar. Then a survey was applied to assess panelists´ preference among developed beverages followed by a sensory analysis to evaluate the attributes of taste, color, texture, smell and appearance among T1, T2 and T3, with the objective of identifying the product to be used in the purchase possibility investigation. Next, the most preferred beverage was chosen and taken to a field study (plaza, local market and bus station) to verify the possibility of purchase. According to the results of the preference survey, panelists preferred RJPG Sugar (96 %) in comparison to RJPG No Sugar (4 %) and RJP Sugar (93 %) in comparison to RJP No Sugar (7 %) beverages, respectively. According to the study of the possibility of purchase, there was an acceptance of the T3 RJPG Sugar by 100 % of the local population and in the same way the data was repeated for the possibility of buying this drink in all the places interviewed. In the study of the possibility of purchase of T3 RJPG Sugar, the participants declared that they were willing to pay CRC 500 to CRC 700, a value that covers the production cost and generates a profit of CRC 194 to CRC 394 with the possibility of purchase.


El propósito de este trabajo fue preparar una bebida a base de Hibiscus sabdariffa y piña como los principales productos con jengibre y azúcar como elementos opcionales y verificar su aceptabilidad y posibilidad de compra por parte de la población centroamericana. La elección de Hibiscus sabdariffa se debió a su aporte de antioxidantes, sabor ácido y beneficios para la salud de los consumidores. Se eligió la piña porque es una fruta tropical ampliamente consumida en todo el mundo y por sus características organolépticas. En primer lugar, se realizó una encuesta para evaluar el perfil de los consumidores de bebidas naturales, y se concluyó que los consumidores preferían consumir bebidas como el jugo de frutas en comparación con el té, el agua mineral y los mates. A continuación, se desarrolló una bebida con los ingredientes principales Hibiscus sabdariffa y piña, produciendo las siguientes mezclas: Hibiscus sabdariffa + piña (RJP) e Hibiscus sabdariffa + piña + jengibre (RJPG). Hubo tres tratamientos diferentes (T1, T2 y T3) con azúcar y sin azúcar. Luego se aplicó una encuesta para evaluar la preferencia de los panelistas entre las bebidas desarrolladas, seguido de un análisis sensorial para evaluar los atributos de sabor, color, textura, olor y apariencia entre T1, T2 y T3, con el objetivo de identificar el producto que se utilizará en La posibilidad de compra de investigación. Luego, se eligió la bebida más preferida y se la llevó a un estudio de campo (plaza, mercado local y estación de autobuses) para verificar la posibilidad de compra. Según los resultados de la encuesta de preferencias, los panelistas prefirieron el azúcar RJPG (96 %) en comparación con las bebidas sin azúcar RJPG (4 %) y el azúcar RJP (93 %) en comparación con las bebidas sin azúcar RJPG (7 %), respectivamente. Según el estudio de la posibilidad de compra, el 100 % de la población local aceptó el azúcar T3 RJPG y de la misma manera se repitieron los datos para la posibilidad de comprar esta bebida en todos los lugares entrevistados. En el estudio de la posibilidad de compra de T3 RJPG con azucar, los participantes declararon que estaban dispuestos a pagar CRC 500 a CRC 700, un valor que cubre el costo de producción y genera una ganancia de CRC 194 a CRC 394 con la posibilidad de compra.
