Selección de atributos de diseño para tienda de chocolates interactiva en la ciudad de Monterrey, México, mediante un experimento de elección.

La empresa Cacep Chocolates ubicada en Comalcalco, Tabasco, México se encuentra actualmente expandiéndose en México estableciendo sucursales en diferentes estados. Para agilizar el proceso de aceptación de las nuevas sucursales, la empresa propone dinamizar las tiendas de manera que los clientes puedan interactuar con el producto, y procesar su propio chocolate dentro de la tienda. Este trabajo tiene como objetivo identificar la zona ideal para una sucursal interactiva y encontrar las características que más aprecian los clientes del proyecto mediante el método experimento de elección. Se evaluaron cuatro características o atributos: i. estilo, ii. ambiente, iii. dinámica y tipo de chocolate y iv. precio por 100 g de chocolate. Cada uno de estos atributos se compone por tres niveles. También se evaluó la interacción entre el tipo de cliente y “dinámica y tipo de chocolate”. Se evaluó mediante encuestas en línea y encuestas en persona en las dos sucursales en Monterrey. Se analizaron los resultados en el programa R con la función support.CEs. Se identificó la ciudad de Monterrey, Nuevo León, como zona ideal para el desarrollo del proyecto piloto. Se encontraron que los niveles de preferencia fueron estilo-moderno, ambiente-dentro de la tienda y fuera, dinámica y tipo de chocolate-refinado, precio por 100g de chocolate-no fue significativo, y la interacción entre tipo de cliente y “dinámica y tipo de chocolate” fue “tu preparas tu chocolate artesanal en la tienda” y “chocolate artesanal”.
The company Cacep Chocolates located in Comalcalco, Tabasco, Mexico is currently expanding in Mexico establishing branches in different states. To expedite the process of acceptance of the new branches, the company proposes to dynamize the stores so that customers can interact with the product and process their own chocolate within the store. This work aims to identify the ideal zone for an interactive branch and find the characteristics that most customers appreciate about the project, using the experiment of choice method. We assessed four features or attributes: I. Style, II. Environment, III. Dynamics and type of chocolate and IV. Price per 100 g of chocolate. Each one of these attributes is made up of three levels. The interaction between the type of client and "dynamics and type of chocolate" was also assessed. It was evaluated by means of online and physical surveys applied to customers in Monterrey Cacep’s stores. The results were analyzed in the program R with the function support CEs. Monterrey, Nuevo León city was found as an ideal area for the development of the pilot project. It was found that the degree of preference was style-rustic, environment-inside the store, dynamic and type of chocolate-refined, price per 100g chocolate was not significant and the interaction between type of customer and "dynamic and type of chocolate"- that the respondents who were already customers preferred "you prepare your own handmade chocolate in the store".
