Resumen
En el siguiente escrito se presentan los estudios de mercadeo, técnicos y financieros que se llevaron a cabo con el fin de evaluar el funcionamiento y rentabilidad de una tienda cárnica gourmet en la ciudad de Bogotá, Colombia. El estudio de mercado se compuso mediante encuestas al nicho de mercado con el fin de estudiar las preferencias de los consumidores y poder establecer los productos y servicios que brindara la tienda. Adicionalmente se realizaron vistas a otras tiendas cárnicas y fincas productoras de ganado con el fin de analizar la competencia y el origen de los productos. Se realizó un plano básico para el diseño de la carnicería y se establecieron los procesos que se llevarían a cabo con el funcionamiento de esta. Finalmente, mediante análisis de ingresos, costos y prestamos se elaboró un flujo de caja con el fin de obtener las proyecciones a 10 años del proyecto y poder declararlo como rentable o no.
The following article shows the market, technical and financial studies that were developed in order to evaluate the functioning and profitability of a Gourmet butcher shop in Bogotá, Colombia. The market study was composed by surveys of the market niche with the objective to study the preferences of consumers and to determine the products and services that the shop will provide. Additionally, visits were made to other butcher shops and beef farms in order to analyze the competition and the origins of the products. A basic plan was sketched for the design of the shop and the processes which will be carried out for the shop to function were established. Finally, through an analysis of income including all costs, income streams and a loan, a cash flow was elaborated in order to obtain 10 years’ projections and determine the project profitable or not.
